Ingredients

  • 4 oz. Brussel Sprouts (sliced)
  • 4 oz. Spinach (chopped)
  • 4 oz. Cabbage/Broccoli (shredded)
  • 4 oz. Kale (chopped fine)
  • 1/2 C. Raisins/Cran-raisins
  • 1/4 C Roasted Pumpkin Seeds
  • 1/4 C Pistachios (or any nut you like)
  • Parmesan (optional)

Honey Poppyseed Dressing (in dressings tab)
Directions:Combine vegetables. Whisk dressing together and toss dressing with salad about 30 minutes before serving.

Ingredients

  • 16 Strawberries  (sliced)
  • 10 oz. Spinach (chopped)
  • 1 Avocado (diced)
  • 1/4 C Sliced Almonds
  • 1/4 C. Raisins
  • Parmesan (optional)



Dressing: Stack Salad and then dress with reduced balsamic vinegarette and a drissel of olive oil.

Spinach Salad

Strawberries and Spinach

Ingredients

  • 8 strips of bacon - cooked "well done"
  • 2 hard boiled eggs - (sliced)
  • 16 oz of Spinach (chopped)
  • 1/4 Red Onion (thinly sliced)
  • 4 Button Mushrooms (sliced)
  • 12 strawberries (sliced)
  • Toasted Walnuts (chopped)
  • Cheese (parmesan or feta or gorgonzola)

Directions

Place your thinly sliced onions in an ice water bath while you prepare your ingredients.  This helps to not make them too bitter. Chop the bacon after it cools in large chunks. Chop the walnuts before toasting them at 400 degrees for 10 minutes. Combine all ingredients.

Dressing

Use the bacon grease from the bacon you just fried, to make the "spinach salad dressing "recipe found in the salad dressing part of my website!

Kale Salad (crunchy and sweet)

Ingredients


  • 1 small head of kale (stems removed)
  • 2 C Radishes
  • 1/4 C Avocado Oil
  • Juice & Zest of a Lemon
  • 1/2 C Parmesan Reggiano
  • 1/4 C Craisins
  • 1 Apple
  • Small bunch of Fresh Basil
  • 1/2 C raw walnuts (toasted)


Directions

Preheat the oven to 400.  Slightly chop your walnuts and then place them on a baking sheet.  Toast for 10 minutes and then set aside.


Mix oil, lemon juice & zest.  Rub each leaf of kale (process called bruising) with 1/2 of the oil. Soak the apples in the lemon juice. Add radishes, craisins, basil and remaining oil & lemon mixture and toss. Enjoy!

Brussels Sprout Salad

Ingredients

  • 12 oz. Brussel Sprouts (shredded)
  • 12 oz. Spinach (chopped fine)
  • 1/4 Red Onion (Minced and soaked in an ice bath for 5 minutes)
  • 1/4 C. Raisins
  • 1/4 C. Craisins
  • 1 C Walnuts (chopped and toasted)
  • 10 slices of Bacon (optional)
  • 1 pkg of Gorgonzola (or Parmesan)
  • 1 apple (peeled and diced)
  • 1/4 C Avocado Oil

Seasonal Options

  • Spring - Strawberries/Oranges
  • Summer - Blueberries/Zucchini
  • Fall - Butternut Squash
  • Winter - Cranberries (sliced and slightly coated with sugar for 4 hours before)

Dressing

  • 2 Oranges (juiced)
  • 1 Lemon (Juiced)
  • 1 Tbsp Dijon Mustard
  • 3 Tbsp of Balsamic Vinegar

Directions:

Make sure all fruit is rinsed and dried, and if you are using seasonal vegetables, cube them, and sauté them until tender. Brussel Sprouts should be shredded in a food processor.  Combine all ingredients for salad and pour avocado oil over. Mix.  Whisk dressing together and toss dressing with salad about 30 minutes before serving.

Arugula Salad (perfect with Italian dishes!)

Ingredients

Dressing 

  • 1 tsp garlic powder
  • 1 tsp dijon mustard
  • 2 tsp red wine vinegar
  • 1/4 C Olive Oil
  • 2 tsp honey

Salad

  • 6 cups of arugula (rough chop)
  • 1/8 red onion (thinly sliced) - optional
  • 6 Tbsp of Parmesan Cheese - optional
  • 1Beefsteak Tomato (chunked) - optional


Directions

Place your thinly sliced onions in an ice water bath while you prepare your ingredients.  This helps to not make them too bitter. Combine all ingredients.


Dressing

Vigorously whisk all ingredients in a measuring cup and pour over salad.  Mix salad and dressing in one big bowl, then plate and serve accordingly.

Rainbow Chopped Salad

Ingredients

  • Dressing
    • ¼ C red wine vinegar
    • 1 ½ Tbsp finely chopped shallot
    • ½ Tbsp honey
    • ¼ C hazelnut oil or extra-virgin olive oil
  • Salad
    • 6 C chopped romaine hearts
    • 4 C sliced red cabbage
    • 1 Large fuji apple, halved, cored, diced
    • 1 mango, peeled, diced
    • ¾ C hazelnuts, toasted, husked, coarsely chopped
    • ½ C pomegranate seeds
    • ½ C crumbled blue cheese

Directions

Dressing

Whisk vinegar, shallot, and honey in small bowl to blend.  Gradually whisk in oil.  Season dressing to taste with salt and freshly ground black pepper.

Salad

Combine romaine and next 6 ingredients in very large bowl; toss to blend.  Add dressing and toss to coat.  Divide salad among plates.  Sprinkle with blue cheese if desired and serve.


Slaw

Traditional Coleslaw

Ingredients

  • 15 oz. shredded cabbage
  • 3 Tbsp. Honey
  • 1/4 C. Apple Cider Vinegar
  • 1/4 C. Mayonaise
  • 1 tsp of Salt
  • S&P as needed

Optional

  • 1/4 C Diced Carrots
  • 1 C Cherry Tomatoes



Directions:Combine cabbage, honey, and apple cider vinegar (and carrots if you choose). Cover and chill for a minimum of 1-8 hours.  Toss mayo with cabbage mixture, and position cherry tomatoes around the bowl for decor if you wish. Salt and Pepper.

Hawaiian Slaw

Ingredients

  • 15 oz shredded cabbage (red & green)
  • 1 red bell pepper, minced
  • 1 carrot, julienned
  • 2/3 cup unsweetened coconut flakes, toasted
  • 1 scallion, minced
  • 1/4 cup chopped fresh cilantro
  • 1/3 cup mayonnaise
  • 2 tablespoons rice vinegar
  • Salt and Pepper

Optional

  • Mango slices
  • Avocado

Directions

Place your thinly sliced onions in an ice water bath while you prepare your ingredients.  This helps to not make them too bitter. Toss the cabbage and bell pepper with 1/2 teaspoon salt and a few grinds of black pepper. Let stand 5 minutes. Add the coconut, scallion, cilantro, mayonnaise and vinegar and toss to coat. Season with salt and black pepper.


(This is great on pulled pork/pulled chicken sandwiches as well as fish tacos! This was inspired by our honeymoon to Hawaii and one of our favorite Summer side dishes!)

Ingredients

  • 6 C or 1 small head red cabbage, tough bottom ribs removed) shredded
  • 2 bulbs fennel - cored and julienned
  • 3 carrots, grated 
  • 2 Granny Smith apples, julienned 
  • 1 red onion, very thinly sliced 
  • 1 cup apple cider vinegar 
  • Kosher salt 
  • 1 C mayonnaise 
  • 2 to 3 tablespoons horseradish

Directions

Place your thinly sliced onions in an ice water bath while you prepare your ingredients.  This helps to not make them too bitter. 


Combine the cabbage, fennel, carrots, apples and onion in a large bowl. Douse with the vinegar, season with salt and let sit at least 1 hour. This will soften the cabbage and make it seem almost cooked, but it will still have a great texture. 


Drain the cabbage of excess liquid but still keep it fairly juicy. Stir in the mayonnaise and horseradish. Taste for seasoning and add salt. The result should be a creamy and tart slaw.

Ingredients

  • 8 oz Feta Cheese (block)
  • 2 Cucumbers (sliced)
  • 1 box of cherry tomatoes (cut in 1/2)
  • 1/4 Red Onion (thinly sliced)
  • 1 Jar of Kalamata Olives (sliced)
  • Olive Oil
  • Salt and Pepper

Directions

Place your thinly sliced onions in an ice water bath while you prepare your ingredients.  This helps to not make them too bitter. Combine all ingredients, then drizzle olive oil over all vegetables. It is amazing how hearty this salad when you use the good quality ingredients.

BLT

Ingredients 

  • 4 strips of bacon - "well done"
  • 1 beefsteak tomato
  • 4 Tbsp of Mayo
  • 1/2 Head of iceberg lettuce
  • 1/8 red onion (thinly sliced) - optional


Of course you can chop these ingredients up and make a salad (which pairs great with the Ranch Dressing listed in the "salad dressings" section of this website).  But you can take the untraditional approach to this salad too!  


Iceberg lettuce is a savior when it comes to eliminating bread.  If you use all ingredients of a BLT (Bacon, Tomato, Mayo) and wrap it up in a few leaves of iceberg lettuce and finish it off with a toothpick...it makes the perfect lunch or even appetizer! Just be sure to crisp the bacon to a "very well done" state, so it will remain crispy, and serve quickly or the bacon can loose its 'crunch'.  Enjoy!

Ingredients

  • 1 head of romaine lettuce
  • 4 pieces of bacon (rough chop)
  • 1 chicken breast (diced)
  • 2 Eggs (hard boiled)
  • 1/2 Cucumber (sliced and cut in 1/2)
  • 1/2 C Freshly Grated Parmesan

Optional:

  • 1/2 C Cheddar Cheese
  • 1/2 Red Onion (Chilled and Thinly sliced)
  • Banana Peppers

Nicely paired with Vinigarette or Ranch or Thousand Island in our "salad dressings" tab


Directions:

Roughly chop lettuce and Julianne cut your vegetables and arrange. Whisk dressing together. Enjoy!

  • 1/4 Head of Iceberg
  • 1 Egg (Hardboiled and Sliced)
  • 1 Tomato (Diced)
  • 2 Strips of Bacon
  • 1/4 C Cheese (Parmesan, Blue Cheese or Feta)



Directions

Dice and Combine!  Dressings commonly prepared are oil & vinegar, ranch, creamy balsamic vinaigrettes. Enjoy!

  • Create this each time you have 2 breasts of leftover grilled chicken!
  • 2 Tbsp of Mayo
  • 2 Tbsp Lemon Juice
  • 1 Finely diced celery Stalk
  • Salt and Pepper

(optional)

  • diced apples, cran-raisins, cashews, pecans
  • Dressing - Balsamic Vinegar or Ranch

Directions

Dice up chicken, and combine all ingredients.  This is wonderful to put over a combo or shredded spinach/ shredded lettuce. Enjoy!
