Lunches - last night's dinner re-vamped!

Ingredients:

Buy the canned tuna, in oil, wild caught.

  • 1 can of tuna (1 can/person)
  • 1 Tbsp Mayo
  • Salt and Pepper

(Variation options)

  • 1 Tbsp capers
  • 1 Tbsp red onion
  • 1 Wedge of Lemon

Directions

Combine and Enjoy!  Served over lettuce (romaine, arugula or spinach), or with a side of vege chips.

Ingredients

  • Create this each time you have 2 breasts of leftover grilled chicken!
  • 2 Tbsp of Mayo
  • 2 Tbsp Lemon Juice
  • 1 Finely diced celery Stalk
  • Salt and Pepper

(optional)

  • diced apples, cran-raisins, cashews, pecans

Directions

Dice up chicken, and combine all ingredients.  This is wonderful to put over a combo or shredded spinach/ shredded lettuce. Enjoy!

Sausages / Hot Dogs

Seemingly simple?  It's because it IS. Prep each week with Turkey & White Cheddar, Ham & Provolone, or Meat & Relish or Mayo.  You will be surprised how much your whole family will enjoy this 'quick fix'!


Note: please get the nitrate free, no antibiotics/growth hormones, humanly raised version of all meat.  Some grocery stores have this as a deli option but Applegate is an amazing packaged brand that is consistent.

We do these 1 time per week, for a quick meal.  When purchasing you must find meat nitrate free, natural casing if possible.  

Ingredients:

  • Hot Dogs/Brautworst
  • 2 Peppers (one green, one yellow/red)
  • 1/2 onion


Directions:

Slice Onions and Peppers into as thin slices as possible and saute. Grill sausages!


DO NOT serve with bun. These are just fine being cut up and eaten with a fork. Served with a side of unsweetened applesauce, salad, vege chips and fruit.

Ingredients:


  • 2 C Shredded Left Over Turkey
  • 2 Stalks Celery, mined
  • 1/2 C Celery leaves coarsely chopped
  • 1 Crisp Apple (Gala/Mac), chopped
  • 1 C Red Seedless grapes (halved)
  • 1/2 C Pecans (toasted)
  • 1/2 C Greek Yogurt
  • 2 Tbsp Mayo
  • 1 tsp Honey
  • 1/4 tsp Salt & Pepper


Directions:

Combine and serve over greens (romaine, spinach, arugula).

Black Bean Burger

Ingredients:

  • 1/2 Onion Chopped
  • 1 Tbsp Garlic
  • 2 (15-oz) cans Black Beans (rinsed/drained)
  • 2 Tbsp Fresh Chopped Cilantro leaves
  • 2 tsp Parsley Leaves
  • 1 Egg
  • 1/2 tsp red pepper flakes
  • 1/2 C bread crumbs
  • Salt and Pepper

Directions: 

Heat Grill or pan over medium heat.


Food Process the following: onion, garlic, black beans, cilantro, parsley, egg, red pepper flakes.  Pulse to combine. Transfer to large mixing bowl; add remaining can of black beans and bread crumbs, salt and pepper.


Divide into patties.  If any mixture is left over, this is a great filling for Black Bean Enchiladas!  Heat on medium-low for 6 minutes each side.  Serve over arugula, with tomato, ketchup, mayo, etc.
